How I stay healthy

Strawberries in my salad

You know how some People are masters at something? Among other things I think I've become a master of salads. How is that possible? Well, most People think salad is boring. I think salad is a perfect opportunity to create a beautiful Piece of art, which you can eat.

Decadent...

I like to play with color, texture, taste. I paint with veggies, fruits, and spices/herbs.

So what's in it?

-parsley nicely chopped,

-half an Avocado

-2 or 3 medium tomatoes,

-one  medium/big red onion,

-some sliced english cucumber,

-a handful of strawberries, nicely sliced,

-pink salt

-ginger

-italian mix (herbs)

and of course...LOVE.

Now you can either just salivate...hahaha....or go to the kitchen, or to the market. And get some fresh ingredients and have a feast.

Veggie auflauf

In english this would mean 'casserole'. Auflauf is the german name, to which I got used to it from my husband, who is german.

Usually the German versions are much more dense and heavy, due to cheese or cream. Mine doesn't use either. But I do consider this dish as one of the more dense things (vegan) to eat. This is something that happens more during the cold months.

Still my version is incomparibably light. The things that make it more dense, is the rice, mushrooms and the coconut milk. Other than that no oil, no frying.

First thing, I boil the rice separately. Usually I like this whole Rice(wild mix), because it adds a Special flavor. Then I place it in this glass form, and add half can of coconut milk, and mix it well. Then I add the following Thing into the composition:

-sliced mushrooms (a small packet)

-half of red bell pepper, chopped finely

-a third of pineapple, finely chopped

-2 medium onions, finely scliced

-2 green onions, finely chopped

-1-2 tomatoes, sliced

-pink salt

-italian mix (herbs)

-maybe add sometimes some garlic powder...you decide what what else want.

All These ingredients go in, mix them well until you get this:

Preheat the oven. Then put it inside for circa 20-25 minutes at 350F.

This can be a very fancy meal, not just for you, but especially if you have guests. And with a glass of wine, red or rose....well just try it:)

Let's say it's Weekend and you don't want to work that hard for your Food. But you want to have fun and stay healthy. You could do the following...

Okay, so you think this looks like work. But it's not really.

You can make the almond cheese in advance(see the recipe somewhere below). And all you have to do is you slice some tomatoes, cucumber,and strawberries.

To enhance the taste of my cheese, I added here, some chopped green onion and fresh dill. It's simply divine.

So how do you use what I've just showed you above? It's kind of obvious. As a spead on some nice rye dry bread, or some other sort of healthy bread/crackers. And use the sliced veggies and fruit as topping.

Healthy (UN)Fries

Very Long time no...see/writing. Well actually I did a lot of writing but not here. So I can say I spent my time very efficiently. I've been meaning to  share more healthy inspirations...now I have the time to finally do it. And the energy....

What about some awesomely tasty and healthy sweet potatoes (un)fries?


They look pretty too, don't they? hahaha...

So you look at them and think, what no oil? No. No pan? No.

All you need is a piece of parchment paper on an oven tray. Place your nicely shaped sweet potatoes in/on it. I sprinkle them with some pink himalayan salt and and if I don't have fresh Rosemary, I use a dry one. 

To make it even more interesting. Well, I make this garlic paste and then I add water over it. I use it as a dip.

It's beyond glorious...

As I was saying there is no oil involved or frying. I let them in the oven for about 15-20 min (350F). And that's it.

Salad moods or the making of a glorious salad. :)

I thought to myself, what better way to inspire you to make a salad like this, than by actually showing you the process of incorporating all the ingredients, one by one. And what a show of colors and flavors this Thing is...

Just in case after you're done torturing yourself looking at These Pictures :) I will write down the ingredients. So prepare yourself to chop up some veggies and fruit.

The main actors are:

-head of lettuce

-handful of parsley leaves

- 3-4 carrots (grated)

- 1-2 parsnips (grated)

- 1 medium size red beet (grated)

- 2-3 medium size tomatoes (thinly sliced)

- 2 medium size onions (small chopped)

- 1 large apple (thinly sliced, like fries)

- herbs (italian mix or herbs au Provence)

- pink Himalayan salt

- some olive oil

- juice from a lemon or two

- a bit of apple cider vinegar

- sprinkle some garlic powder too

The rest is pretty clear, after watching the pictures above. Mix everything together, and you can have ART for lunch or dinner, or whenever you feel like it.

Already salivating? hahha...me too. Well this is the upgraded, more decadent version of a snack I posted bellow. It has basically the same ingredients, plus cacao.

But just in case here are the ingredients:


-one apple thinly scliced, like the fries.

-1-2 banana thinly sliced

-some cinammon

-some cacao

Mix all of them together and there you go...mighty glorious dessert.

Guacamole

If you still haven't discovered Guacamole...then where have you been all this time? hahahaha...

This rich and delicious dish, and so easy to make, entered my life, when I became vegan. And I am so grateful it did. :)

I usually make enough  for two people who only eat this. This means quite a lot... What can I say, I like to eat. Plus I don't have to count calories eating this way, so I eat until I get full. That's my rule.:)

Ok. So enough teasing and making you salivate here.

What do you need to make some?

-2-3 ripe avocados

-5-6 medium size tomatoes (or more...I use more)

-1-2 medium size onios

-1 garlic tuber

-Juice from 2-3 lemons

-some pink himalayan salt

I make the garlic into a paste. I use a garlic press to mince the garlic, then I sprinkle some pink salt over it and mix until all get homogenized.

I mash the avocado with a stick mixer until it becomes a nice paste. I add the lemon juice and the garlic paste, mix everything together.

Cut the tomatoes in small pieces(cubes), the same goes for the onions. Throw them in the avocado paste, and mix until they are well incorporated.

So, what are you wainting for? Go make some for yourself! :)

Many of you say things like: "How many times can you eat salad before you get bored with it?"

The answer to that is simple. NEVER.

Does this one here look boring to you? I didn't think so...

Nature has so many colors and flavors...it's a blasphemy to even think it's boring.

Salad is fast food. Only the right kind.

So what goes inside this bowl?

The following are chopped up or sliced nicely.

-a head of lettuce

-a handful of parsley leaves

-a half of a red bell pepper

-half of an avocado

-an apple

-a big onion or 2 medium size

-half of a cucumber

-3 carrots(grated)

-1 parsley root(grated)

-3-4 tomatoes medium size

-herbs(italian/Provence mix)

-himalayan pink salt

-a bit of a apple cider vinegar

-a bit of olive oil

Mix all the ingredients nicely in a big salad bowl...and voila. Dinner...lunch...breakfast...snack. Whatever you want to make it.

Next time when you think "boring"...think of this images.

Carrot soup

Beautiful color... I know... Delicious? What do you think?!

And if I tell you that this is a basically raw soup...

I love to prepare this soup especially during the cold season. It's perfect. The content is luxurious, dense and warming due to ingredients like ginger, avocado, coconut milk.

I know that most of us dread to cook things that are too complicated, or what we think is complicated and time consuming. And a soup might seem like that to many.

Not this one.

All you need is a good/decent blender  and to cut/chop up some vegetables.

I will start with the bottom layer of what goes inside that jar:

-3 or 4 medium size tomatoes

-parsley leaves (a handful of that)

-1 or 2 parsley roots

-a bit of ginger root

-half of an avocado

-4 or 5 carrots (medium size)

-one big onion

-pour the half of can of coconut milk

-some herbs mix (italian/Provence mix)

-some pink himalayan salt

Then over the whole thing pour water (2/3 of the jar). I preheated mine. Or you can use the blender to warm the soup up. Or if your blender doesn't have that function, use the stove to warm it up.

After you covered the ingredients with water, blend for 1 or 2 minutes. 


And this is what you get. Gorgeous rich soup.

This is gourmet and healthy at its best. This can be a perfect dish when you have family or/and friends over for dinner/lunch. Or just for you, giving yourself the best of the best, because you deserve it.

for the love of red beet

I hear that there are a lot of people out there basically hating RED BEET. I seriously haven't got a clue, why this wonderful plant has such a "bad reputation". Red beet is so versatile, so delicious, so nutritious, so...awesome.

Now tell me you don't want to eat that... :) I could have it right now...hahahaha.

Anyways, let's see what ingredients we need:

- chop up a head of lettuce(whatever you have)

- grate 3 or 4 medium carrots, 1 or 2 parsley roots (use the bigger size)

- chop up 1 big onion or 2 medium size ones.

- squeeze the juice of a lemon

- sprinkle some pink himalayan salt

- a bit of apple cider vinegar

- a bit of olive oil

Mix all of them in a big salad bowl and voila...awesomeness to eat.

Quick Dessert/snack

Sometimes during the day...or at night, I feel like having something other than my usual food. Something to stop an emotional craving. And we all know that's when most of us use this as an excuse to binge on commercial sweets, and all the unhealthy stuff, only to feel really sorry afterwards. Well this Thing has actually a solution. Of course we have to do our inner work...no matter what. But when in "need" instead of doing regretable choices for our health...well, there's always something natural out there, good and delicious not to mention healthy, to munch on.

You probably wonder what's in there, right? Well, just an apple, a banana and some cinnamon.

I thinly sliced a banana and an apple, sprinkled some cinnamon over it and then mixed the whole thing together. That simple. Of course you can add more ingredients, for variation. But the idea is that everything inside that bowl is 100% natural, raw, and has no artificial anything.

So, happy (not a care in the world...) munching!!!

almond cheese

Not only it looks delicious...it is delicious. What do you think it goes inside this heavenly cheese?

Dairy? Nope.

Just ALMONDS...and some seasoning.

Do you think it's hard to make? Not really...

Okay, enough teasing. :)

Soak overnight 400-600g of almonds.

Then next day when you have them grown in size due to the water absorbtion, rinse them and then put them in the blender. Add the Juice from 3-4 lemons, some pink Himalyan salt. Add also some spices(an Italian mix or herbs au Provence). On top of that add some water and blend away  for 1-2 minutes, all those nice yummy ingredients.  And voila. CHEESE. Only the good and healthy kind.

Put it in a nice bowl, then sprinkle on top some of the seasoning(Italian mix, etc) to cover up the surface. The cheese can hold up to 5 days if refrigerated properly.

Now you're thinking how do I eat it, right? Easy.

Chop up some onion, red bell pepper, slice some tomatoes and if you have chives, chop up some of that too. I didn't have this time.

Then get some crispbread. I prefer Wasa and all the other European brands that make similar products, given the fact they use simple natural ingredients...and NO sugar, which is almost impossible not to find in an american one. This one here is LIGHT RYE.

Now I think you get the picture.. :) Use it as a spread on a nice crispbread. Garnish with some chopped up onion/red bell pepper, sliced tomatoes, some salt and a little bit of that seasoning spices you used to make it, and you got yourself a Gourmet dish.

Are you eyes happy when they see this? Mine are....hahaha.

kale Berries Ginger Smoothie

This is one awesome and powerful recipe. Not very different from what I would drink usually.

Recently I moved house, continents even, and discovered this recipe in a Health Store down town New Brunswick. Tom and I went there for other things to buy and we ended up buying aside from our list, two green grass shots and 2 awesome kale berries ginger smoothies. Yum....

I think what gives that extra Special something is the ginger. It gives it a nice buzz. Not to mention it wakes you up. Why have coffee (that eats your calcium away and other important things, messing with different internal processes) when you can have this holy awesomeness.

It's so simple to make... 

You will need:

- 1-2 handful of kale

- 1-2 handful of berries (berries mix)

- a  bit of ginger (walnut size or less depending on the intensity you want...) my blender jar has 2 Liter capacity.

- 3-5 ripe bananas

- add water (more than half of the jar)

Blend all of this together. For a minute or less, but no longer than 1:30 minutes.

And there you have it. Heaven in a mason jar! hahaha...

And if you feel lazy doing this in the morning-to prepare a new one to take to work with you-do it in the evening. Do more in the evening and just fill up a big mason jar/bottle, and keep it in the fridge until the next morning.

Eating vegan and mostly raw, most people consider this a challenge. And a salad seems too simplistic and unsatisfying. I would have to disagree with that. Nature has so many colors and flavors, and when you mix enough ingredients, the result will please even the biggest carnivore on the planet.

You don't need more than 10-15 minutes to chop up some vegetables/lettuce/fruit and make it into a beautiful, nutritious, not to mention DELICIOUS!!! salad.

Here below are the main actors:

- a handful of lettuce(whatever you have) or a lettuce mix

- some parsley (leaves and stems)

- half of red bell pepper

- a small/medium onion

- half of an avocado

- half of an apple

- some sliced cucumber

- 2-3 sliced tomatoes (whatever sort you have at the time)


In two small containers take with you some pink Himalyan salt and some olive oil, for seasoning.

And that's it. 

I call this Tom's salad, because this is what I give my husband for lunch too...hahha.
